These darnes (fillets across the whole salmon) are chargrilled and gently poached then drizzled in virgin olive oil and aged balsamic vinegar. Presented on a non-returnable large platter on a bed of mixed leaves with a lemon garnish and a fresh coriander mayonnaise . Serves approx 10.
